Ingredients for Mumbai Vada Pav

  • For Potato Stuffing
  • 3- Potatoes (medium)
  • 4- Garlic
  • 1- Green chilly
  • 1/2 Tsp- Mustard seeds
  • A pinch- Hing
  • 1/2 Tsp- Alco Food's Turmeric powder
  • 3-4- Curry leaves
  • 1 Tbsp- Coriander leaves (chopped)
  • To Taste- Salt

For Making Batter

  • 1/2 cup- Besan
  • A pinch- Hing
  • 1/2 tsp- Turmeric powder
  • 1/2 cup- Water
  • To Taste- Salt

Other Ingredients

  • 4- Pav
  • Oil for deep frying
  • 2- Fried green chilies

For Making Green Chutney

  • 1/2 Cup- Coriander leaves
  • 1- Garlic
  • 2 Drops- Lemon juice
  • 1- Green chili (Chopped)

For Making Sweet Chutney

  • 1/4 Cup- Seedless tamarind
  • 1/2 Cup- Water
  • 1/4 Tsp- Cumin seeds
  • 1/4 Tsp- Ginger powder
  • A pinch- Hing
  • 1/4 Tsp- Alco Food's Red Chili Powder
  • 4 Tbsp- Jaggery powder
  • 1/2 Tsp- oil
  • To taste- Salt

Step By Step Instructions

  • Blend the ingredients used to make green chutney in a blender.
  • For making sweet tamarind chutney, soak tamarind for half an hour.
  • Heat the pan and add oil, cumin seeds, ginger powder, red chili powder, and hing.
  • Add jaggery and salt to thicken the tamarind chutney.
  • When it cools down, keep the sweet chutney in an air-tight container.
  • Take boiled and steamed potatoes, and heat a pan; add oil, mustard seeds, curry leaves, and hing.
  • Add garlic and green chili paste, and turmeric powder. Saute for some time.
  • Add this mixture to the mashed potatoes, salt, and coriander leaves.
  • Mix the mixture well, and make small balls. Make slightly flattened balls.
  • Add besan, salt, turmeric powder, hing, and water to batter.
  • Now heat a pan, add oil, dip the balls in the batter, and coat them, then put them in the oil for deep frying.
  • Now for making vada pav, take pav and slit it into half. 
  • Spread pudina and sweet tamarind chutney to the sides of the pav, and put the potato dumplings in between of pav.
