Whole spices, or Khada Masala, are spices in their original shapes, such as whole clove, nutmeg, or a stick of cinnamon. Always add the whole spices to the hot oil at the beginning of the recipe. With this, you can release the essential oils and aromas in these whole spices and let them intermingle with the other ingredients.
You can prepare a spice powder using a mortar and pestle. Alternatively, you can use the spices in their powdered form, which can be the sole spice or a blend of various spices to make a spice powder. Whole spices signify you include the spices in their whole form, Khada Masala.
