INDIAN EGG CURRY GRAVY RECIPE

Egg curry is a very comforting, spicy, and delicious Indian dish of curried eggs. It is made with the following: 

  • Hard-boiled eggs
  • Onions
  • Tomatoes
  • Whole & ground spices, and
  • Herbs

How To Make Spicy Egg Curry?

The method of making this egg curry is like any other Indian curry dish. You start by making the onion tomato base.

Most egg curries don't need frying eggs before adding them to the gravy. But frying eggs enhances the flavor. Toss eggs in a little salt, Alco turmeric powder, and Alco chili powder. Pour in some very hot oil. Keep tossing them until you see small brown patches.

Ingredients

  • 6 Eggs

Cooking Instructions

  1. Cover the eggs with cold water in a pan. Let it boil. 
  2. Cook the eggs for around 7 to 8 minutes. 
  3. Transfer the eggs to cold water. When they get comfortable to handle, peel them.
  4. Toss the peeled, boiled eggs in ¼ tbsp each of the following: Salt, turmeric powder, chili powder
  5. Heat oil in a pan. When the oil gets hot, add the eggs to the pan. Toss them in a medium-hot flame till you see small brown blisters on the eggs. Remove and keep aside.
  6. To the same pan add 1 tablespoon of oil and butter. 
  7. When hot, add dry red chilies. Saute for 30 seconds until they turn smoked.
  8. Add the chopped onions now. Sauté for about 3-4 minutes. The onions should soften and start to brown by now.
  9. Add ginger-garlic paste. Sauté for a minute. Keep stirring regularly. When there is no raw smell of ginger garlic left, lower the heat. 
  10. Add the following now: Alco cumin powder, Alco coriander powder, Alco turmeric powder, Alco red chilli powder, Alco Kashmiri red chilli powder. Sauté the mixture for about a minute until they turn aromatic. Sprinkle a little water to prevent the mixture from burning
  11. Add the chopped tomatoes. Cook them until they turn soft and mushy.
  12. Add chopped green chilies and crushed Kasuri methi (fenugreek leaves). Mix well.
  13. Add some water when you see oil separating from the mixture.
  14. Season with salt. Now add Alco garam masala and fried eggs to the pan.
  15. Mix everything thoroughly. Cook for another 2-3 minutes.
  16. Your mouthwateringly delicious egg curry is ready! 
  17. Garnish with fresh cilantro and serve.
